It has a k04 turbo on and runs 270hp so it has room for mapping, anyone have experience on this? Does the ecu need to come off or can it be done on the car?

If it has 270hp, most likely the HPFP and injectors have not been done and it has nearly no room for mapping.
In fact 270hp you can get with the stock turbo and exhaust only. BTDT many times.

ECU on or off the car is irrelevant, as probably you are not doing the mapping yourself, but no, you don't need to remove the ECU.
There is a long list of likely things that are wrong as well and need checking engine wise. Also, make sure the haldex has had oil changes performed at 60 000km intervals as scheduled.

Its been well maintained and when the k04 was fitted (machined to fit bigger impeller) it had an uprated vagtech hpfp fitted and s3 injectors, THS intercooler 3 inch downpipe, . I need to change the fuel pressure relief valve for an rs4 one , 3 bar map sensor, 200 bar fuel rail pressure sensor and fit a better primary fuel pump. As it stands it is very torquey but runs out of stem by 4500, but it does go well, I thought the speedo was off until i checked it against a satnav!

I quite like, hopefully it will be a reliable hack. Just need to finish off the go faster and stop faster bits over the next year
