          Ok.....

Make sure the engine idles smooth and that it doesn't start revving up and down when it's hot. These NG engines are fine but if they go wrong it's generally a pain to find the fault.

Check the roof operation is smooth and that it works properly if it's powdered and if it's manual make sure the button on the B pillar is working.

Boots tend to leak in water around the rear light panel, aerial hole and boot seal so check its dry.

Other than that it's the same as any other 80, wishbones, topmounts, front wings etc, seat bolsters etc.

          Hope that helps a little...

          Andy

Don't expect the 2.3 in a cabby will be quick, but if it's slow there is probably something wrong with one of the engine sensors or so. It should pull in one go and not hesitate.
Wiring loom to the boot lid is likely to go wrong causing various issues. The main issue with the manual roof is the button in the door opening to release the roof case lid thingy won't work. In that case you need an allen key to open it, that is not the normal operating procedure!
