Because your reaction time to sound is longer than reaction time to vision and also your hands react quicker than the legs as the nerve impulse has longer too travel.

Ever stubbed your toe and you knew it was going to hurt but for a split second it doesn't and then you feel the pain?

You can test the theorem out, by closing your eyes and using your toe to click the mouse when you hear the sheep running . I tried it (without my toe I must admit) and I was slightly slower, but with less triggerfinger.
