Its not that bad so I book it into our NCT centre and mark it for export.
Within 30days it goes to UK.
You need to get a V55c form or somthing like that from DVLA, you then need to get a MOT certificate using the VIN (NCT is NOT accepted), along with Proof of name- passport or birth certificate/ Proof of address- utility bill or bank statement. Postal order for motor tax and the Original certification of registration, which I have. Then two weeks or so later you get your TAX and letter for the plates.

You wont need to get a Certificate of Conformity for UK Type Approval, as it was originally a UK car, no taxes or duties to pay, just an admin fee which I think is £50 or so. You more than likely will get back the original UK plate.

Would there be an issue with buying it and driving it back to UK with it insured on the VIN and then sorting the paperwork out?

Usually That is how most people would do it., thats how we get UK cars to ireland, we insure under UK reg, and then within the timeframe get it on irish plates. But under new irish rules it has to go to NCT centre to be exported on paper first, then it you can continue with the above.
But at the end of the day its down to your insurance company if they will insure under irish plates temporarily.

Don't think you will come across a better Coupe for a longtime worth the £500 just to go and see it IMO

Quick flight to Dublin then catch the train down to Cork from Hewston Station- I did it a few yrs ago, and it wasn't a long journey really

Whats import tax to uk these days as its not uk no plated

Its a UK car originally. All duty was paid when it was originally imported to UK. There is no import duty to pay now, just admin fee to get the UK plates.
