Not much, same as with a 200/250/300/whatever kPa MAP sensor exceeds 4.8v output signal. If the chip is programmed right, not much will happen.
The problem with 5.2v output range is different, part throttle/idle will be messed up and will require remapping, but WOT will definitely be OK.
This sort of mods are not necessary up to 450-480HP IMHO/IME, and all these power ranges need a real-time emulator to be tuned correctly. Too many fudge factors involved in tuning such cars past 400HP without real-time access and trace functions.
