I recently bought a 1990 Coupe Quattro 20V and when I put the key in, the center screen flashes the OK symbol and then the red low oil pressure symbol with the 3 beeps. (This is while the engine is not running.) The low oil symbol goes away when the engine is started. I have checked all the fluids and they are normal. What could this be?

Check the wiring to the oil pressure senders or check operation of the warning switches. Sounds like there might be something going on there. My gauge pressure sender caused me a bit of bother once but that was because I inadvertently fitted a vw vdo item which had different triggering action inside it. Used to get oil pressure warning once it went over 3000rpm.
there isn't a pressure problem but it is sort of the opposite to your issue.
