Not good. I have all the schematics at home though so we should be able to sort it (I know I should dig them out for and will try to find time tonight)
Can you see anything else on that loom? Where does the other end go? Can you list the colours as you did for the other plugs?

I attached a table of what i have managed to figure out:
The 4 wire listed in the bottom are still unknown. Maybe the only should be connected, since they are 2 + 2 of same color.
Right my cruise control is fixed so I can give your wiring my full attention.
So far you have already solved most of the wiring:
Using diagrams 73/8 and 73/7
Code:
1 green/blue - 58d connection in dash panel wiring harness (instrument lighting)
2 blue/black - T2s/1 (2pin brown connector behind aux instruments) - black/white - Oil Pressure Probe
3 brown - Earth Connection 199 in dash panel wiring harness
4 grey/brown - 58a via fuse #14 (5a)
5 green/black - T2s/2 (2pin brown connector behind aux instruments) - black - Oil Temperature Probe
6 black/blue - 15 via fuse #12 (15a)
Cigarette Ligher
Code:
Brown - Earth Connection 199 in dash panel wiring harness
Grey/Blue - 58d connection in dash panel wiring harness (instrument lighting)
Red/Blue - 30 connection in dash panel wiring harness (battery positive)
Ashtray light
Code:
Brown - Earth Connection 199 in dash panel wiring harness
Grey/Blue - 58d connection in dash panel wiring harness (instrument lighting)
I'm assuming you have the aux instruments that have the circuit board with the 6pin connector on the back rather than 3 separate instruments (that RHD cars have). In which case the lighting booster is built into the instrments.
I will carry on searching the diagrams (in between phone calls at work) to sort out the rest.
The diagram I added in post 9 is from the family album. The diagrams are not all as good as that one though.

I think I may have worked out the four wires at the bottom of the list.
It would seem the Green/Red wires are related to the right hand indicator circuit. Possibly to the stalk and/or the dash panel insert (clocks)
The Grey/Yellow appears to be the parking light circuit feed. It should run between the Ignition siwth and the indicator stalk.
This is not definate and will need some further investigation your end.
I've also had a look at the connector you found near the battery. It is T6b on the schematics and provides power to number plate lamps, rear foglight and reverse lights and also the switch feed from the boot lock for the interior light.
The melted wire is the earth for the rear section of the car. It also ties into the earth point in the tailgate itself. I suspect the reason it has melted is becuase the earth connection going into the tailgate is broken. I know we have mentioned it a couple fo times before but you really need to check that boot on the tailgate (if only for my peace of mind )
I am still working on the other 6 pin connector but it seems a reasonable assumption that the wires correspond to the 19 cut wires you found.

Indicator is turn signal. As they are cut in the same loom it is unlikely they are supposed to connect together. You will need to check continuity on the turn signal circuit to determine what has been done.
The parking light circuit on your car has probably been bodged like the other wiring. You are going to need to check the continuity from the stalk to the ignition switch and see if you can work out what has been done.
I think there is still some work left for us to do to get it all back how it should be but we are well on the way. The wiring must have been cut and changed for a reason. It is probably because something failed and they changed it rather than fixing it. I had this on my Avant when I first bought it and someone had added wiring to make the electric windows work as the relay was faulty. It took some time to figure out. My V8 has lots of little bodges on it which I am still working through too.

But first in line, i will connect the connections that is obiously cut, and se how things turn out, then i can start looking for something that does'nt work.
I've been looking at it again and it's possible the green/red is for the front windscreen washer motor. It's difficult to say without knowing what doesn't work on the car.
I would suggest reconnecting the wires (temporarily for testing purposes) and see what works and what doesn't. It might be best to do it in stages so that if a problem arises you can identity what is causing it.
My suggestion would be to do the cigarette lighter wiring and ashtray wiring first as there is nt much that can be wrong with those.
Then do the aux. instrument wiring and see what works and what doesn't. I wonder if maybe the booster that is built into the instruments has failed.
After that I would try the 6 pin plug we still haven't identified.
Obviously at each point check and see what is working and what isn't. It is tedious but especially with earth circuits on VAG cars it can be surprising what is connected to what. I once had to refit all the looms in a mkII Golf shell and it wouldn't statr becuase of a bad earth in the boot!!
