I am looking for some advice on either chipping or remapping but do not fully understand the differences or degree of stress either put on your engine

    cheers

Basically the same thing. The only differences are the type of chip, either generic or custom.
A generic type is one that has been developed for your type of car but has not been tailored speficly to it.
A custom type has been mapped on your car, for your car. This is the preffered method, as no 2 cars are ever the same.

Remap with a reputable company. (MRC for example)

im thinking of a remap also , but the prisces where i live scare me a little, seems like most of the reputable comapnies here want around 1000 euro or more

is that really the price you mmust pay for more power.

What would be fair to expect on a otherwise stock 3B, around 270bhp or more , and how much torque can i expect

No it's just that it is a generic chip and not one that is that well done. They did not spend that much time mapping it apparently. Unlike their later stuff.
A custom chip is always the preffered method IMHO
