You'll be Ok machining the OE piston down to the height of the dish section. I've seen this done on an S2 running over 600bhp without any problems. It had also been used for a season's hill climbing, so it had seen plenty of abuse too

If someone has an old piston they don't need anymore, they could cut it in half, thus creating a cross section of the piston. This way you can see the thickness of the crown at various points and how much you can safely remove. What the minimum safe thickness is, I don't know.91 Modded 3B
