This is a stupid question but...
I'm installing a turbo gauge in PSI. What's the pressure stock RS2 turbo should deliver?
I've always seen pressure value in BAR and have even seen different values (1.2, 1.3, 1.5).

Depends on whether you are running stock software or not. Stock would probably be in the 20-22 psi (gauge, not absolute like the in dash trip computer boost gauge) range. With aftermarket software, it would be higher. For example, my AAN is fully RS2'd and I run MRC Stage 3 "RS2" software which provides a peak boost in the 26 psi (gauge) range.
If you were buying a boost gauge in psi, I would recommend one that goes to 30 psi, not just 25 psi, especially if you are running or plan to run aftermarket software.

Ok. Doubt solved!
I'm running all stock, turbo and software. My gauge has a -30 in/hg to +25 psi range. Maybe a little low?
Rs2 only has overboost mapped at 6500 and 7000 rpm from factory to make the car autobahn proof.
You should be seeing 1.4 bar. Pressure test the car and make sure you don't have any leaks anywhere.

What does these rpm mean?
I thought that on stock rs2 you get 1.4 as overboost for a couple of seconds and till a certain rpm (not very high since the turbo gets out of the map).

Wrong, stock RS2 has no overboost, except at 6500-7200 RPM where it allows more boost for a certain amount of time.
Do you have any boost profile of the rs2?
I thought that it goes at 1.4 bar and then backs off after 5500 rpm or so to 0.9 bar (not to blow the turbo).
Maybe you mean that it has always 1.4 except after 6500 where it goes down?
Isn't overboost when at certain rpm the pressure rises above the "average" for extra torque?
have you done a boost leak test sometime? because probably your car is right but reading 20Psi does not mean you have not boost leaks
No, I haven't. All I've done is remove all the hoses when replacing the turbo and checked if I see any hole but of course that test is with no pressure.
Is there any proper way to perform that test?

No, the only proper way is to pressurize the system from the MAF on.
If you don't have special gear, just plump the MAF hose with a blank, plumb the PCV portion with a blank, disconnect the vacuum line from the dump valve and put air in there.
