3 pin new style multifunction sensors are affected by the wind and that causes the temp to virtually drop at open road traffic. Use some polyethene or similar to insulate the sensor.
I've done it. Now the gauge is at 90 and does not drop a bit.
Or just live with it. The engine temp is around 90 as it should but the gauge just shows wrong figures...

I have wondered why my water temps keep dropping while driving - I have changed the thermostat several times(with different types) and bled it umpteen times - I don't have the ducting around the rad anymore - so this is what it is - WOOHOO - I'll test it by adding a cowel to the sensor - Cheers Porkis
No way! Mine reads very low when driving! I too have removed the coweling from around the rad. I just thought that sensor was duff, but it does work fine in traffic

Mine does the same since I changed the sensor. My aux rad is in the bin but the air flow didn't affect the old 4 pin sender. With the new 3 pin type I get 90º in town but when on a run it drops 2 or 3 bars.
I'm changing the thermostat again though as the hall sender needs changing asap (evian down the back of the pulley isn't working anymore)
and if your doing the sender you may as well do the cam belt...
and if your doing the cam belt you may as well change the pulleys and water pump...
and if your doing the waterpump you may as well do the thermostat and that little water hose...
and so on and so on.

the best intentions are fraught with disappointment - gil grissom
I'd say the thermostat - they aren't known for a very long life... Its an arsey job on the S2 - change the two water link hoses when you are there.
The only way to test the sender is to remove it when you have the coolant system empty. Then measure the resistance on the appropriate pin with some hot water - or hey just boil the kettle, pour some water into your least favourite mug and pop the sensor into it - whilst its wired into the car with the key on - your guage should show ~100 celsius !
