At about 60 mph I have a little wobble on the steering wheel. It's not the wheels as I've changed them and the symptoms are still the same. There's a slight judder on the brakes (annoying as they're new) but other than that the only thing I can think of is CV or driveshaft. The judder started (or I noticed it) after changing a balljoint. Fairly certain everything is tight...
Any more thoughts?

How bad was the ball joint ? Maybe the CV joint is causing this as they do sometimes when there on there way out and if the ball joint had play in it it could have been masking the judder by not transmitting it . I have had this before when I've replaced ball joints and bushes etc. after which you then find the next week link as the new stuff is nice and tight .
Strange that it's the driver's side CV, I'd expect the passenger side to take most of the punishment due to track / roundabout direction. Oh well, have to leave it and see what happens. The only othe rthing it could be is that the brakes are rubbing slightly and causeing a strange interaction at that specific speed - stranger things have happened.

Off the driveshaft - possibly, just odd that it's at a very specific speed and not at any multiples of that speed, i.e. 60/30 etc. Not wheel related, swapped on the OZs and the same issue exists. I'm wondering if it's brakes related, might get the discs and pads off and give them a rough-up to re-bed them in.

No, I think it's constant. It's like a little tug on the wheel. Odd for sure.
I had a problem like this on a Nissan Primera, it was like a tugging on the steering turned out after months of changing ball joints, track rods etc it was the hub bearing. would be worth jacking the car up and checking for any play at the wheels either side 2 side or up and down also maybe double check all nuts etc are tight especially if you have replaced any parts
