Go to Pistonheads and print a copy of the S2 currently for sale for £7500 and send it to your insurers saying your car is equal to this one except for the milage, hence it is worth about £6,500. Also inclde the one for £5,500 and tell them yours is better.
Then when they want to inspect the car, make sure you are present. Point out all the good bits like leather, aircon etc but be careful with aftermarket stuff. get him to agree it is a great car in great condition and also that it is a rare model....not just an Audi 80.
Reject their first offer with evidence as to why it is worth more (suggest a value around 1.25x what you want to receive). Reject their second offer and give further supporting evidence (further good cars for sale plus fact on the number of cars built for rarity value etc) and tell them you will accept a value of around 1.15x what you will actually accept.
Their 3rd offer will be their last so you need to be damn good during the early negotiations.
