I wouldn't bother putting a V8 in the SWQ unless it's a turbo version, not worth the
hassle. A mildly tuned 20v I5 will piss on the NA V8 for power.
It's also worth noting that none of the S8, NA V8, etc motors make the power they are supposed to.
They are supposed to be 340hp but most dyno at ~320.
For ref, my mate has a stripped S8 that ways the same as my Avant and my car will out run it no problem. I only have an RS2 set up nothing mad, (yet).
More than anything it just won't sound right without a I5 20v turbo in it!

The Mustang is a gem
IMHO and perhaps of many other here, you should put an i5 engine in your SWB quattro.
Also if you want to make a perfect SWB Sport Quattro replica you will need another car for the A pillars.

I am not trying to make a replica, just a swb, mine will have standard A pillars as i like them better, as to the engine i will see what i can find but at the moment it looks like a V8 to go with my Mustang and 31 model A

Welcome Colin, absolutely spot on bunch of people on here, I've only been on here a couple of years as I was looking for an S2 but seen this year a '95 RS2 LHD in mint condish so had to have it, and massive gratitude to the previous owners of course. Anyway hope the project goes very well for you, and you will find a vast wealth of knowledge here too.

BTW that Fastback is in absolute stunning condish too, clearly tons of love and efforts have gone into it. A mate of mine in Norway bought from the states a shell and completely replicated Ealanor and it's absolutely gorgeous too.
