Motorbikes are the most fun to beat, but had a chuckle wasting a Lotus Exige and a Porsche Cayman S. Fun cars usually only show up when I'm out in one of the slower cars

BMW Z3 M Coupé, was raining though. And the guy thought it was a 220 bhp car (still laughing)... => 3 pints for free that evening
Porsche 944, ended up in a ditch trying to stay behind, of course i helped the guy putting his car back on the road ... => 50 euros for me
Hyundai coupe v6 or sth like that apparently with some kind of sloppy turbo mod and "over" 300 bhp, first red light he stalled it, happens to the best I said laughing,,,
Second red light I smoked him again and he fried his clutch ... that doesn't happen to the best I said driving by(in the other direction) ... => Dint in the rear wheel arch because the mo*-/f*/-ucker threw his cell phone at me

A Bentley Continental GT up a motorway slip road just north of Newcastle-Under-Lyme was a good one. We'd been having some 'fun & games' up the dual-carriageway beforehand, and when it came to the slip-road he booted it and probably thought his extra power would shove him up there quicker. It didn't quite work out like that as I was able to power round the outside of him and easily clear him before we even got up the hill. That was a productive day as on the same dual carriageway I showed a Civic Type R what a 15yr old estate car was capable of when he decided to tailgate me.
Astra Coupe Turbo, Evo5, various BM's & Mercs, several Scooby STi's on both twisty & straight roads. Biggest surprise is a friends MR2 Turbo, it grips like nothing I've seen before off the line and with it's Stage 3 kit (280bhp at the wheels) it surprises pretty much everybody on it's K plate!! Once we hit 60+ the extra grunt shoves mine ahead, but the grip and weight of his make it formidable off the line.
And those who race bikes and win, are clearly picking on the easy targets
Give me a smooth, twisty road and I'd see off any car/bike on my RS250, with only a quarter of a litre engine it anhialates my S2 on acceleration!

Some clown in a bright red Ferrari 348 with his 'bit of fluff' next to him...
Decided he'd demonstrate a fast start from a set of dual carriageway traffic lights. He bogged down off the line and missed a gear which didn't help, because the green thing in lane one had long gone...

My favourite kill of all time was in my 300bhp 3B... M4 slipway, he nailed it from the lights as did I - i clawed away initially, he came back side-by-side but I had a nose ahead... both backed off for roadworks and slipped behind right on my tail... got past them and he nailed it round me, i geared down and responded and kept on his tail until 120 when he backed off; sailed by as I backed off as well. I was shocked to be neck and neck with such a machine
The only car I came across in the 3B that dispatched me properly was the 507hp M5, fair cop to it
Best in the Avant was a skoda diesel in torrential rain, took 2 miles to catch back up to me, then on came the blue flashing lights and I got an absolute grilling for 20 minutes... falsely accused me of jumping the lights the barsteward

Ererrrr.... not that I do this sort of thing, but......
1) Focus RS. I know it's not that fast, but guy was trying to show off to his girlfiriend.
That was easy and waved goodbye.
2) Porsche GT3 around Oulton Park (although have to confess I was not driving). He would not budge out of the way so was overtaken on a straight!

THese are fading memories though. Hope to be doing this sort of thing again soon.
Cheers
