Was out logging today and the laptop battery was struggling. Also when parked up back at the house I started to drive off a couple of times forgetting I was plugged in to the mains

This unit rated at 1200watt????? I don't think so!!
Even if the Inverter was 100% efficient (and it won't be), then by dividing the wattage (1200) by the nominal vehicle voltage of 12, then simple maths comes up with a figure of 100amps, when working at it's maximum.
Of the two supply cables in the photo- one of them has a cigarette lighter plug on the end (show me a vehicle that can supply 100A through a cigarette lighter socket) , and the other cables with Croc Clips on them have cable sizes that I would guess are either 14/030 or 28/030 and the current ratings are (from memory) 8.75A and 14.5A respectively.
I personally used to use a laptop with Microsoft Autoroute (before the days of reliable Sat Navs) on the passenger seat, fed from an Inverter from Maplins.
The Part No. (again from memory) was N65AU, but I've had a quick look on their website, and can't find it- although it seems to have been superceded by N66JU at £29.99
From my own experience of the Maplins product, it did the job well (so well, in fact, that I permanently connected a 2nd inverter from 65/030 cables and dropped it into one of the boot pockets of my Espace, plugged a 4gang trailing socket into it, and could then charge a number of cordless power tool batteries whilst travelling from job to job)
I would just consider the amount of damage a lesser Inverter could do to your laptop!
