I bought a RS2 turbo but those was bigger than my first RS2 original turbo.

The car goes "perfect" with Paul's remap.
And with Doc's the car runs much more. But... in low rpms the car is totally emty.

With Paul's remap the turbogauge, when I pull, indicate a peak initially and later goes to real standar remap value. With PRJ's not. And is on this time when the car be dead

Your previous map had 1.4 bar peak boost, of course it reaches the peak earlier...
It takes less time to reach 1.4 bar than 1.8.

As to lag - you answered your question yourself. Your turbo has a bigger hotside, and that's why the lag.

Missing boost on gear change - seems like boost drops to 0, meaning dump valve or wastegate getting stuck.
The way your car behaves has absolutely nothing to do with software.

Sorry, this is wrong. I have those files here on my hard drive, just took a look, target boost 1.5 bar.
Regardless, the problem you describe is that on gear change your boost is below spring boost (even negative), that means either the intake hose is collapsing or a dump valve issue.

Anyone who understands anything about these cars will tell you, that it's impossible for electronics to cause boost to be lower than spring boost at wide open throttle.
If you have a K26 #8 hotside on your RS2 turbo, 4400 rpm full boost is normal, and no software is going to change anything.
