Went round to S-Express' gaff today and he ran the VAGCOM on it and it threw up the error:

    00525 - G39 Oxygen Sensor.

So it looks like Papvas was right and I have a faulty Lambda sensor. Thanks for everyone's help on this and big thanks to S-Express for his laptop work, hope you get your handbrake cable sorted!

Managed to get the lambda changed today, it seems alot better but I'll have to give it a few days to see whether it rears its ugly head again. Is it worth re-setting the ECU by disconnecting the battery for a bit so it "forgets" the fault?
