Hell, you can get a graph from a tail-pipe LC1 for example, as long as your exhaust has no leaks.
So basically, this still does not do anything to clarify the situation...
It clarifies for me that I have nothing to worry about

360cc's will be maxed out way before the turbo is. So either you are running lean at high rpm's or simply not making the stated power.
    This is just physics.
I'm sure you're right. I certainly can't comment as I'm just an enthusiast. Maybe I'm not making as much power? Either way we will find out when I get it onto a nice hub dyno. Butt dyno says it's very good and noticeably better than the previous setup.

      You are way too optimistic.
Looking at AFR without taking into account all the other parameters tells you almost nothing.
The only thing that you can see is wheter it is running excessively lean or rich - you'll have to trust their word that it doesn't, but it's always a good idea to note numbers...
I have seen too many wrongly tuned cars...

That said, you are probably just running a tuned RS2 chipset, which drops boost very fast after around 5500 rpm, although a K26/K27 can hold higher boost to redline.
The bottleneck of your hardware setup right now are definitely the injectors.
