To Ian Jemo.
Double clutching and toe/heel are driving techniques that are meant to ease off some of the strain from the mechanicals of a cars transmission. I could rant for hours on this topic but to make a long story short, you use the clutch the first time to get out of gear while braking with your toes, then you blip the throttle with your heel to get the revs up for the lower gear and to get the gear syncros to be more "ready" to intertwine, then you use the clutch again to engage the lower gear.
As another member has just said, it doesn't always work perfectly ( it's very difficult to master this technique on every single downshift ) but when it does, it's like the lower gear you wanted to select actually gets "sucked" into gear and the lever hardly needs to be nudged in the right direction ;-) !
