Thanks for all your help lads . I think i'm there with the list of bits to do and the parts required. So..
The parts I have to do the RS2 conversion, the parts needed for a general engine re-fresh and the work items being carried out are:

    Parts:

    RS2 turbo - OEM Refurbished
    Wagner Evo Em
    RS2 Injectors
    New Injector seats
    RS2 Intercooler
3" Downpipe - The GB one
Exhaust - Infinity 3" with Sports cat
Full set of Black Samco Boost and Water hoses
    Full Gasket set.
    Cam Position Sensor
    Fuel Pump - 044 Bosch
Head studs - OEM or Victor Reinz or equivalent.
    Water Pump
    Front and Rear Crank Seals
    Pressure Plate
    Woodruf Key and Bolt
    Billet Lower Pulley
    Cam Belt and Tensioner
    Crank Bolt

    General Work:

    Remove engine.
Full clean, degrease, prep and re-paint block, oil pan and the various bolt on brackets etc.
Full clean and degrease of the engine bay generally. Already done the bits I can reach, just need to finish off. Will touch up any poor paint etc whilst everything is accessible.
Soda Blast and Lacquer seal Inlet Manifold, Cam and Coil Covers.
    Re-core Aux Radiator.
    Fit VDO Boost Gauge.

I think that's pretty much it. If you can think of anything else I should do whilst the engine's out please let me know.

    Cheers

    Russ

The oil deflector in under the cam cover gets very brittle, might want to replace that its not NLA and was about €18 , what about thermostat + seal?

Change the clutch when you're in there if I was you. Don't need to uprate it, stock rs2 item will be fine, also release bearing and flywheel bolts.

I know what you're saying mate but the clutch feels really strong and TBH the funds just can't stretch that far just yet... I'll just have to hope it holds out for the next year or so.
