You've put a huge amount of time, money and effort in to thus and it's looking great.
Bolt on adaptors can be as large as you like, really. With the cups being 7J, they are quite narrow. You can get the sane style but wider.
I'd say rear of a coupe needs et20-25 to fill the wheel wells. Fronts look inboard due to narrower rim.

I think I may buy spacers to fill the rear arches more, I think 25mm should be enough to give me ET30 in case I want to lower it more once I've had the exhaust done
