Yes. That is the conclusion I wanted you to come to.

      Worth a try anyway.

Had a very "fun" drive to Halfords today with engine cutting out every 50 meters But I've replaced the thermo fuse with a 15A fuse and car hasn't cut out since, so that's very good.

Sadly I didn't pass MOT first time round with the most serious one being tie rod end. So I've ordered that and then off for round 2

I am surprised how good it drives and how quick it is considering there is a split in Michelin Man hose (boosts to 1.9bar) Car feels much more stable and steering seems better too, so I definitely don't regret selling red one

Good news - it runs. Which Thermofuse did you replace, the S64?

Bad news - you should have (or need to have) spare fuses in the fuse panel on the end of the dash that you could have borrowed (see below - )

This is a RHD driver's end fuse panel (LHD is very similar). The stack of 4 fuses on the left are all spares.

Took off the Michelin man hose as I thought there is a cut (there wasn't) but I noticed there was quite a lot of sludge in it. I know it's ok to have a bit of oil in there, but it seemed a bit too much? What could be causing this?

Perfectly normal to have gunk in your boost hoses.

                          Worrying about nothing.

Is there any advantage of deleting PCV and replacing with catch can?

IMO yes. If you are concerned, look for posts by Popdemonic. He has a Mann Provent catch can installed in the PCV system after the main PCV pressure control regulating valve with the "air" still going over to the MAF hose to be burned and the oil from the bottom of the Provent draining to the oil pan (sump).

Location as per this diagram that I annotated for him (and others):
